Druen gennemgår klassisk gæring i ståltank, hvorefter alkoholen fjernes via moderne Spinning Cone Column – nænsomt ved lav temperatur (ca. 35?°C) for at bevare Pinot’s flagrende finesse.

I glasset viser den rubinrød elegance – let klar, ikke tung. Duft af ribs, kirsebær og moden hindbær folder sig smukt ud. Og på tungen? En fin, integreret tanninstruktur, ellers slankt og næsten tørt med en behagelig længde – tættere på “rigtig” Pinot end du måske forlanger af en alkoholfri vin.
