Nogle gange kan Barossa-shiraz være så tyk, at man kan skære den i skiver. Giles og Fergal vil have friskheden og elegancen tilbage og lader klaserne vildgære i hel tilstand med en forholdsvis kort fadlagring efterfølgende. Det giver hindbæreleksir med rosmarin, salvie og smuk blødhed. Den ekstremt stenede og mineralholdige jord giver klar mineralitet. 93 point hos Suckling.
Thistledown er ikke bare endnu et vinhus. Vinene er håndplukket og håndlavet af de allerbedste druer, vildgæret i hele klaser og uden industrielle tilsætninger. To Masters of Wine, Giles og Fergal, står for driften og de styrer benhårdt efter friskhed, terroir og good old Aussie juiciness. Vinene er ikke i hverdagsprislejet, men stadig regulære kup i deres liga.

The blueberries and spice of Eden Valley dominate, but the edges are rounded out by the plushness of the Ebenezer fruit. It's medium to full-bodied, silky and rich, with hints of caramel and cedar on the long, mouthwatering finish.
